Cauliflower and Rice?
In continuing to try and eat healthier I came across a recipe that for whatever reason appealed to me. I am Puerto Rican and if you know Puerto Rican’s one of our main dishes is arroz con pollo (chicken and rice). This recipe was cauliflower and rice. I thought about chicken and rice straight away and I wondered if the cauliflower would be a good substitute for the chicken.
As I prepared this dish I didn’t stick to the script at all it’s my M.O. I substituted the white rice with brown rice right off the bat. I also spiced up the cauliflower pretty much the same way I would had I been preparing chicken and rice. The main spice of course was Sazón, Goya.
I have to say granted the texture of cauliflower isn’t near that of chicken. But the flavor of this dish was just as good. The meal didn’t weigh heavy in the stomach it was light yet filling. I loved it. I was never a huge fan of cauliflower but this was definitely a game changer.
Again, I am not a vegan or vegetarian. I do eat chicken and fish but moderately. Red meat I am done with for so so many reasons and pork has been scarce and will most likely not make the cut. No pork on my fork. Cold cuts and any processed versions of meats I have cut out. Chicken I love to eat but I would like to cut down on it even more than I have and this was a great way to start doing that. Instead of eating chicken say once or twice a week, once or twice per month would be a good mark. I would surely enjoy it and appreciate it more on the days I do eat it.
A year ago if someone would have suggested this meal to me I would have probably laughed in their face. With an open mind and a spirit of adventure I discovered that spiced up cauliflower is a damn good. I will definitely be cooking this dish again as well trying others using cauliflower. I of course looked up the health benefits of eating cauliflower and again it was both motivating and inspiring. I will post my findings in a separate post. Cauliflower, it does a body good.
Chicken vs cauliflower nutrition
Chicken and cauliflower serve different nutritional purposes: chicken is a high-protein, zero-carb source for muscle building and satiety, while cauliflower is a low-calorie, high-fiber, vitamin-rich (C and K) vegetable that aids digestion and heart health. Chicken provides dense, essential protein, whereas cauliflower offers high-volume, antioxidant-rich nutrition.
